Salmon is fantastic on the grill, but after making this recipe I think I have a new way to cook up some salmon fillets! This salmon is baked to perfection with a pesto rub smothered on top, leaving it flaky yet moist.
This salmon is easy to whip up with only 4 ingredients which makes for another easy weeknight dinner that only takes 30 minutes to make!
Yields 4 servings of Keto Pesto Baked Salmon with Broccoli
The Preparation
Salmon:
- 1 tablespoon pesto
- 2 tablespoon mayonnaise
- 2 tablespoon full-fat plain greek yogurt
- 24 ounce salmon
- Salt and pepper to taste
Broccoli:
- 3 tablespoon olive oil
- 16 ounce broccoli
- Salt and pepper to taste
- 1 medium lemon
The Execution
1. Measure out and prepare all ingredients. Preheat oven to 425F.
2. Rinse and chop broccoli.
3. In a bowl, combine pesto, mayonnaise, and greek yogurt. Stir until combined well.
4. Roast broccoli on baking sheet for 10 minutes. Take out of oven.
5. Move broccoli around on baking sheet and add salmon filets with the pesto sauce on top.
6. Roast in the oven for 15 minutes together.
7. Plate the salmon and broccoli. Squeeze lemon juice over salmon and broccoli.
