I never thought of stuffing my meatloaf this way, but it turned out incredibly good. The cheese oozed out when I cut it! That’s when you know it’s a good meal. This recipe is great to cook on those cold winter nights and it will really warm you up!
For this recipe, I used ground beef, but you can use any ground meat. You can also stuff it with anything but I decided to use spinach, cheddar cheese, onions, and mushrooms. The cheddar cheese I used is from the deli at my local supermarket. I recommend using these instead of the Kraft slices. Deli slices are bigger and aren’t as processed.
Yields 8 servings of Keto Stuffed Meatloaf
The Preparation
- 500 grams ground beef
- 6 slices cheddar cheese
- 1/4 cup onion, chopped
- 1/4 cup green onion, chopped
- 1/2 cup spinach
- 1/4 cup button mushrooms
The Execution
1. Mix the meat with the salt, pepper, garlic, and cumin. In a small greased bread (or meatloaf) pan, line the bottom and sides with the minced beef, leaving a hole for your stuffing.
2. Layer the cheese on the bottom of the meatloaf.
3. Add in the onions, spinach and mushrooms.
4. Use the leftover meat to place on top, covering the spinach and mushrooms, acting as a lid.
5. Bake at 350°F for one hour.
This makes a total of 8 servings of Keto Stuffed Meatloaf. Each serving comes out to be 248 calories, 19.5g fats, 1.3g net carbs, and 15.9g protein.

Keto Stuffed Meatloaf
Ingredients
- 500 gram ground beef
- 6 slice cheddar cheese
- ¼ cup onion chopped
- ¼ cup green onion chopped
- ½ cup spinach
- ¼ cup button mushrooms
Instructions
- Preheat oven to 350F. In a small greased bread (or meatloaf) pan, line the bottom and sides with about 2/3 of the ground beef, leaving the center open for your stuffing.
- Layer the cheese on the bottom of the meatloaf.
- Add in the onions, spinach and mushrooms.
- Use the remaining meat and spread evenly on top, covering the spinach and mushrooms so that it acts as a lid.
- Bake for one hour, then remove from oven and let rest for 5 minutes in pan. Remove to serving platter, then slice and serve with your favorite side!

At the end is it necessary to cover meat with foil? or just to bake without it?
There is no covering in this recipe – not sure what exactly you mean. You don’t need to cover the top with foil.
The instructions say to mix the meat with the salt, pepper, garlic, and cumin, but don’t call for these ingredients in the list of ingredients.
We added them into the ingredient list – sorry for any typos. You can use any spices you’d like in this recipe also.
How do you know how much equals up to one serving.
It makes 8 slices, but you may need to use 2 slices in a serving. It depends what your side dish is that you’re pairing it with (if you have one). It also depends on what your macros and goals are. You can just adjust the serving size to fit your needs.
The amount of meat is too small. 1 lb of meat is enough to cover the bottom and the sides about a 1/4″ thick. You’ll need at least another 1/4 lb for the top.
