This keto-friendly cabbage and pesto hash dish uses cabbage and tasty halloumi cheese to replace the traditional potatoes that most hash recipes call for. The cabbage turns into a lovely sweet and silky texture when fried, and goes together wonderfully with the salty fried halloumi cheese.
This recipe is super simple to make. Simply chop up the cabbage and fry it up in a pan with the avocado oil and seasoning. While that’s cooking, chop up the halloumi into bite-sized pieces before frying them up in a separate pan. Once both of these ingredients are cooked, combine them into one pan and then stir through the pesto. While you’re finishing off the hash, place a couple of eggs into a pan and fry them up until cooked. Once everything is ready, place the components onto a plate and serve piping hot.

The Preparation
- 2 tablespoon avocado oil, divided
- 200 gram green cabbage
- 100 gram halloumi cheese
- 4 large egg
- 2 tablespoon pesto
- Salt and pepper to taste
The Execution
1. Measure out and prepare all of the ingredients. Chop the green cabbage into small pieces/slices.
2. In a frying pan over low to medium heat, add the half of the avocado oil and cabbage. Cook for about 5 minutes or until the cabbage turns tender. Remove from pan and set aside.

6. Add the cabbage, halloumi, and pesto back into the frying pan. Stir all together to get warm.
