The Preparation

  • 16 ounce cauliflower
  • 4 ounce pepper jack cheese, shredded, ~1 cup
  • 4 ounce cream cheese, at room temperature, ~1/2 cup
  • 1/2 cup sour cream
  • 2 tablespoon hot sauce, or more to taste
  • 2 medium green onion, chopped
  • 1/2 teaspoon garlic powder
  • salt and pepper, to taste
  • 16 ounce boneless, skinless chicken thigh, cooked and cubed, or rotisserie chicken
  • 2 tablespoon fresh cilantro, chopped

The Execution

1. Gather and prep all of your ingredients. Pre-heat oven to 350F.

2. Chop the cauliflower into bite sized pieces.

3. Bring a pot of salted water to a boil, then add the cauliflower and boil for 5-6 minutes or until just tender. Drain and set aside.

4. In a bowl, combine the pepper jack, cream cheese, sour cream, hot sauce, green onion, garlic powder. Stir together well, then season with salt and pepper to taste.

5. Add the chicken and cauliflower into the cheese mixture, then gently fold together.

6. Transfer the mixture into a casserole dish and bake for 20 minutes.
