Caesar salads are one of my favorite classic salads. I made this recipe to make one of my go-to flavors easier. Simply mix all the ingredients into a bowl and marinate the chicken for at least 2 hours.
I like to marinate my chicken for as long as possible to get all the flavor and juices out of it, so I marinate these the night before I make them. I serve them with some mixed greens and a drizzle more of the caesar dressing!
Yields 2 servings of Keto Baked Caesar Chicken
The Preparation
- 12 ounce boneless, skinless chicken thighs
- 4 tablespoon caesar dressing
- 1 teaspoon lemon juice
- 1 teaspoon kosher salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 12 ounce spring mix
- 4 tablespoon caesar dressing
The Execution
1. Measure out and prepare all the ingredients.
2. In a bowl, combine caesar dressing, lemon juice, salt, garlic, and onion powder. Stir until well combined.
3. Add the chicken into the bowl, smothering them and getting the marinade on every part of the chicken.
4. Cover with plastic wrap and put in refrigerator for at least 2 hours but up to 24 hours.
5. Before cooking, pre-heat oven to 400F. Evenly space out the chicken on a baking sheet lined with aluminum foil.
6. Bake chicken in the oven for 30-35 minutes or until chicken reaches an internal temperature of 165F.
7. Plate the chicken with leafy greens and additional caesar dressing. Enjoy!
This makes a total of 2 servings of Keto Baked Caesar Chicken. Each serving comes out to be 612 calories, 50g fat, 7.7g net carbs, and 34g protein.
