Yields 10 servings of Keto Bacon Cheeseburger Kebabs
The Preparation
Kebabs
- 1 pound ground beef
- 1 tablespoon Worcestershire sauce
- ½ teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried minced onion
- 6 slices bacon
- 5 slices cheddar cheese, quartered
- ½ head iceberg lettuce
- 10 cherry tomatoes
- 20 slices dill pickles
Dipping Sauce:
- ½ cup mayonnaise
- 2 tablespoons sugar-free ketchup
- 1 tablespoon mustard
- 2 tablespoons minced onion
- 2 tablespoons minced dill pickles
- Pickle juice, to taste
The Execution
1. Preheat the grill to 375’F. Make sure that you can do both direct and indirect cooking.
2. Mix the ground beef, Worcestershire sauce, salt, pepper, garlic powder, and minced onion. Use a scoop for form even balls. Roll them then flatten each ball into a somewhat flattened burger patty shape.
3. Use a cast iron skillet. Place it over the indirect heat then cook the bacon. Do not make it too crisp, or you won’t be able to skewer it. Set the bacon aside then remove the grease.
4. Place the skillet back over indirect heat then add the burger patties. Cook through, turning halfway. Place the skillet over direct heat then sear both sides. After flipping to the second side add a slice of cheese and melt over each. Set the burgers aside.
5. Use large skewers to stack the burger patties, bacon, lettuce, tomatoes, and pickle slices. You should end up with two patties per skewer.
6. Mix the mayonnaise, ketchup, mustard, minced onion, minced pickle, and pickle juice. Serve along with the kebabs.
