Why do some recipes use more than one type of sweetener?

Typically, we use multiple sweeteners as a way to balance out the not-so-pleasant aftertaste that they can have when consumed individually. For example, many of our recipes use both erythritol and stevia because they seem to cancel out the aftertaste that each has and work like a charm together.
