So I had the ribs that I made last week sitting in my fridge and I thought it was about time I put them to use. I figured a spicy, yet refreshing lettuce wrap would be awesome! And boy...was I right. These lettuce wraps pack a punch if you're using a hot chili paste. They're absolutely delicious and the fall off the bone tenderness of the meat just adds to the whole experience. In total this will make 6 whole lettuce wraps. What I did was cut each of the 6 lettuce wraps in half to create ...

Superbowl Sunday Buffalo Strips
Sunday is soon coming, and that means the Superbowl is almost here! I've got my money on the Broncos this year, that offense is not going to be stopped. Who do you think's going to take home the trophy? Anyway, we need some food for Sunday right? I figure I'm going the classic route and doing some buffalo chicken strips for it. They're crunchy, full of flavor, and absolutely delicious! You can use whichever hot sauce you want to, I personally went with Frank's Buffalo Wing Sauce because it's ...

Keto Style Szechuan Chicken
Spicy with a hint of sweet. This chicken will knock your socks off and you'll continue to eat it because it's fantastic! For me, the garnish of just a few gratings of lime and lemon really took it over the edge. The subtle citrus notes as I was eating added a great contrast in flavors through the dish. I tried to stay away from Asian food, but it just never works out! I wanted something that was both a bit sweet and very spicy. While I was making the sauce for this it didn't taste extremely ...

Pork Loin Ribs with Keto BBQ Sauce
I wanted to cook a lot of ribs for a little get together we were having this weekend. I went with 3 racks of ribs, but if you don't want to do that many, just scale the recipe accordingly. Remember that 1 Tablespoon = 3 teaspoons! These ribs came out absolutely awesome! The BBQ sauce tastes like a sauce you'd get at a restaurant, maybe just not as sweet (which is the way I like it). It's smokey, with hints of sweet and tangy. So, what did the damage come out to? Only 1.5g carbs per ...

Omnivore Burger with Creamed Spinach and Roasted Almonds
This scrumptious burger is not what it seems. Mushrooms, peppers, and onions run through the meat to give a decadent taste that you may have never experienced before. The rich flavors of vegetables mixed with the savory flavors of the spices come together at a beautiful medium, giving you a delicious burger! You might be thinking that mushrooms is a terrible idea to put in burgers, but they're really awesome. They absorb flavors really well, meaning they will absorb a lot of the fats and ...

Low Carb Corndogs
Since I made the lemon glazed fritters the other day, I thought that using a batter to fry things would be pretty awesome. I haven't had a corn dog in a while and it just popped into my head. But, I didn't want to just use hotdogs - so I decided on using 2 varieties of sausage to see which one came out better. To me, the chicken sausage was really on point - but not in the chicken department. When I used to live in the Bahamas, we used to get conch fritters all the time with a mayo/ketchup ...

Egg and Bacon Cheese Baskets
Since I made the cheese chips recipe a while ago, I figured it was time to revisit them. This time, I wanted to use the cheese crisps as both a textural addition as well as a vessel for the food to sit on. This not only offers a deliciously crisp contrast in texture, but it also adds extreme portability to your breakfast, which is a big plus in my book! Make sure when you take your bacon out of the pan, you try to keep as much bacon fat in the pan as possible. This will allow you to cook ...

Applewood Seared Pork Chops
I haven't made pork chops in a while, so forgive the sear (or lack of) that I got on the chop. I had to cook 4 chops in a pretty small pan, so I didn't get the heat distribution I wanted. Either way, the recipe turned out delicious and the seasoning is fantastic! This will be done, fridge to plate, in about 25 minutes. This one used mostly pre-made seasonings, which I have a lot of for some reason - but it was really fast to prep and cook everything. It goes great with the bacon and brussels ...

Cast Iron Kitchen Sink Frittata
I've been wanting to do a frittata in a cast iron skillet for a long time, but could never do it. I'm so glad I finally got around to it because the crust this thing created is phenomenal. A little bit crunchy, and then a whole lot of egg, meat, and cheese. I recently got my cast iron skillet off of amazon. It's pre-seasoned, but if you buy one (and I highly suggest it), you should re-season it yourself. Wash it with only water and salt. Wipe it down with olive oil or bacon fat and bake it at ...

Lemon Glazed Spice Fritters
After going about making the Fried Cookie Dough, some people had let me know that they weren't getting the same results as me. It came down to using casein over whey protein powder (one is thicker and contains more xanthan than the other), so their dough wasn't turning out right. Others didn't want to use processed protein powders in their food - so I sought out to create something that uses neither protein or processed foods. I came up with fritters. Though the dough is a lot more sticky ...
