So I know off the bat that some of you won't be a fan of this recipe. The first bite was strange, to say the least. Though if you have an open mind about this (and I'm sure you will do if you make it) they really do taste awesome. The biggest problem here is curry powder. You have to make sure you're getting some decent quality curry powder. Regularly, curry powder is made of a blend and combination of spices including curry leaves, tamarind, coriander, ginger, garlic, chili, pepper, poppy ...
Bacon Wrapped Pork Tenderloin
Pork wrapped in pork and then topped with some pork. Sounds like a good idea, right? Well it is! The mustard tones that come through in the marinade really give a taste that'll keep you coming back. The deep flavors that get imparted in both the bacon and the tenderloin are fantastic, and the twang of the mustard slightly comes through after each few bites. Since the protein is a little out of whack on these, I decided to get more use out the Bacon Jam I had made recently. I stuck about 1 1/2 ...

Double Peanut Butter Balls
You'd imagine from all the recipes that I make, that my favorite dessert would be something baked, something very out of the ordinary, or something difficult to make. Well, that's far from the truth. It's double peanut butter balls! This is one of my absolute favorite recipes - not only for taste and simplicity, but just for the pure joy of peanut buttery goodness that comes out of it. When I gained weight on a ketogenic diet, this right here was the reason. I used to make these things ...

Chicken Pesto Roulade
Great chicken is both juicy and flavorful - this hits the nail on the head in both of those categories. Pesto is one of my favorite sauces, basil and toasted pine nuts give a fantastic fresh and nutty flavor that pairs extremely well with poultry. As you all know, I like to use citrus when I can, so I've added some lemon zest to give citrus notes throughout the chicken. This pairs very well with the floral notes of the basil, and contrasts perfectly with the rich fats of the cheese. I ...

Bacon Jammin’ Green Beans
Green beans are one of my favorite things to eat when they're fresh, and I just don't eat enough of them. When I get them, I almost always pair them with bacon. Yeah, sure, they're awesome with garlic and parmesan, but who can resist the bacon? Since I had made some bacon jam the other day, I figured I would use it in the green beans - and they paid off! This dish was absolutely delectable. Salty, sweet, crunchy, with just the right amount of chew from small pieces of bacon. A must ...

Bacon Infused Sugar Snap Peas
Sugar snap peas aren't that common in keto cooking, but they are a delicious mixture of textures that keep you coming back for more. Although they run a little bit high in carbs, every once in a while they are worth it. I normally have bacon fat in the fridge, waiting to be used for baconnaise or just general sauteing - so why not use it for our vegetables too? These save well for me in the fridge - their crispness lasts for about 24 hours in the fridge, then they start to turn soggy. So if ...

Sometimes you're in a hurry and you just want something that's simple, tasty, and familiar. This salad is all of these, with a kick of spice! If you've made some delicious meals and you totally forgot to make a side, fear not, this can be whipped up in under 3 minutes. It's one of my favorite salads, very simple but still holds a lot of flavors. It goes well with almost any dish, but I do enjoy pairing it with chicken or even eating it as a snack. Yields 2 total servings The ...

Fried Queso Fresco
These ooey gooey squares of goodness are one of the best ways to get a side in when you need a lot of fat. By itself, this cheese isn't the best - but it has the solubility to stand up to the high temperature required for frying. Get a nice layer of crisp on these bad boys and they're seriously good eats. They make for great snacks, or a great side item to a lean meal or keto Mexican meal. Just be aware that they don't save great - they're best served hot. Yields 5 total servings The ...

Almond Crusted Keto Quiche
I make a ton of frittatas, whether they're in muffin version, in the cast iron, or just in a casserole - they're fantastic. But I do miss that crusty crumbly pastry on the outside. So, I set out to re-create a quiche! Frittatas save extremely well for me in the fridge, lasting all week and sometimes longer, and it's the same with this! Can you say breakfast every day for the rest of the week? The only thing that I had a problem with, was the first slice. I had to ruin the crust on it to ...

Keto Friendly Bacon Jam
So, we all love bacon, right? Bacon is a delicious treat we get to eat on a regular basis...but it just doesn't seem like I get enough of it as is. I wouldn't mind having some bacon with every meal. Well, now we can! Sorry vegetarians, but this one is not going to be for you. You can pretty much use this stuff on anything savory. I spread it on keto breads, spread it on frittata muffins, and top my dinners with it. It's just plain delicious! All of the flavors together create a sweet, ...
