The Preparation

- 8 ounce raw cauliflower
- 1 1/4 cup mozzarella cheese, shredded
- 1 large egg
- 1 large egg white
- 2 tablespoon olive oil
- 1 tablespoon Italian seasoning
- 2 teaspoon ground psyllium husk powder
- salt and pepper, to taste
Wrap Filling
- 8 tablespoon ranch dressing
- 4 ounce spring mix
- 8 ounce deli-sliced ham
- 8 ounce deli-sliced salami
The Execution
1. Gather and prep all of the ingredients. Pre-heat oven to 350F.
2. Cut cauliflower into small pieces, then add to a food processor.
3. Pulse the food processor until the cauliflower resembles large crumbs.
4. Add in the remaining ingredients for the wraps and season with salt and pepper to taste.
5. Continue to mix in the food processor until a smooth batter is formed.
6. On a parchment-lined baking sheet, spread the batter into a thin square shape. It’s very important to thin out the batter enough to get a large enough wrap. You want the dough to be less than 1/4 inch thick, about 4-5mm.
7. Bake the wraps for 12-15 minutes or until they turn a golden brown color. Once browned, flip the dough and return to the oven for 2-4 more minutes until the other side is also golden brown.
