The Preparation
Stuffed Zucchinis:
- 2 tablespoon olive oil
- 1/2 medium red bell pepper, diced
- 8 ounce canned tuna
- 1/2 cup salsa
- 2 medium zucchini
- 1/4 teaspoon cumin
- Salt and pepper to taste
Avocado Salsa:
- 1 small avocado, cubed
- 1/4 cup fresh cilantro, chopped
- 3 tablespoon red onion, minced
- 2 teaspoon lime juice
The Execution
