Thai Chili Lime Meatballs

Thai Style Meatballs
- 1 lb. Ground Pork
- 1 lb. Ground Beef
- 4 stalks Spring Onions chopped
- 1 tsp. Salt
- 1 tsp. Garlic Powder
- 1 tsp. Ginger Powder
- 3 medium Red Chili Peppers chopped, about 70g
- 2 tbsp. Gluten Free Soy Sauce
- ¼ cup Honeyville Almond Flour
- 1 ½ tbsp. Olive Oil for frying
- 1 ½ tbsp. Sesame Oil for frying
- 6 Tbsp. Sesame Seeds Optional - will add carbs
Sweet Chili Lime Sauce
- ⅓ cup Sugar Free Apricot Preserves
- ¼ cup Water
- ¼ tsp. Red Pepper Flakes
- 2 tbsp. Lime Juice
Mix all of the meatball ingredits (except oil) in a bowl until a sticky mixture is formed.
Roll out meatballs to size of your choice. You should end up with 20-30 meatballs.
In a cast iron skillet, heat oil to medium high heat. Once hot, add meatballs, but don't overcrowd pan.
Cook for about 3-4 minutes on each size, flipping as needed and placing a lid over the pan.
Combine all sauce ingredients in a pan and bring to rapid boil. Turn heat down and continue to stir every so often.
Once all meatballs are cooked, add all pan drippings into sauce and stir in well.
Optional: Roll meatballs in sesame seeds until fully covered.
