Ingredients
  

Thai Style Meatballs

  • 1 lb. Ground Pork
  • 1 lb. Ground Beef
  • 4 stalks Spring Onions chopped
  • 1 tsp. Salt
  • 1 tsp. Garlic Powder
  • 1 tsp. Ginger Powder
  • 3 medium Red Chili Peppers chopped, about 70g
  • 2 tbsp. Gluten Free Soy Sauce
  • ¼ cup Honeyville Almond Flour
  • 1 ½ tbsp. Olive Oil for frying
  • 1 ½ tbsp. Sesame Oil for frying
  • 6 Tbsp. Sesame Seeds Optional - will add carbs

Sweet Chili Lime Sauce

  • cup Sugar Free Apricot Preserves
  • ¼ cup Water
  • ¼ tsp. Red Pepper Flakes
  • 2 tbsp. Lime Juice

Instructions
 

  • Mix all of the meatball ingredits (except oil) in a bowl until a sticky mixture is formed.
  • Roll out meatballs to size of your choice. You should end up with 20-30 meatballs.
  • In a cast iron skillet, heat oil to medium high heat. Once hot, add meatballs, but don't overcrowd pan.
  • Cook for about 3-4 minutes on each size, flipping as needed and placing a lid over the pan.
  • Combine all sauce ingredients in a pan and bring to rapid boil. Turn heat down and continue to stir every so often.
  • Once all meatballs are cooked, add all pan drippings into sauce and stir in well.
  • Optional: Roll meatballs in sesame seeds until fully covered.
