Ingredients
  

The Waffles

  • ½ cup almond flour
  • 2 tablespoons flaxseed meal
  • cup coconut milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 2 large eggs
  • 2 tablespoons Swerve
  • 7 drops liquid Stevia

The Filling

  • ½ cup raspberries
  • Zest of ½ lemon
  • 1 tablespoon lemon juice
  • 2 tablespoons butter
  • 1 tablespoon Swerve
  • 3 ounces double cream brie

Instructions
 

  • Mix together all waffle ingredients and then cook on a waffle iron. While warm, lay slices of brie across waffles.
  • In a pan, heat butter and swerve. Once browning, add raspberries and lemon juice/zest. Let this cook until bubbling and jam-like.
  • Place waffle sides with brie under a broiler until brie is soft and waffle is slightly crisp.
  • Assemble waffle with brie and raspberry compote. "Grill" in a pan over medium heat for 1-2 minutes per side.
