Ingredients
  

  • ounce pork rinds
  • 2 large egg
  • 2 tablespoon heavy cream
  • 1 teaspoon maple extract
  • 1 teaspoon cinnamon
  • 2 tablespoon coconut oil for frying

Instructions
 

  • Measure out and prepare all the ingredients.
  • Grind up the pork rinds in a blender or food processor until you get a smooth powder.
  • Add the eggs, heavy cream, maple extract, and cinnamon to the blender. Blend again until you get a smooth consistency.
  • Turn the stovetop on medium heat and add some of the coconut oil to a pan.
  • Add the batter into the frying pan. Keep an eye out for bubbles forming in the middle and the edges looking cooked.
  • Flip onto the other side and continue cooking, making sure the pancake is fully cooked. Repeat this process with the rest of the batter, adding coconut oil as needed.
