Maple Sausage Pancake Muffins

6 ounces ground sausage 1 ½ cups almond flour 4 large eggs 4 tablespoons coconut milk 4 tablespoons maple syrup Recipe Here 2 tablespoons psyllium husk powder 1 teaspoon vanilla extract 1 teaspoon baking powder ¼ teaspoon salt 20 drops liquid Stevia ¼ cup erythritol
1. Preheat oven to 350F. Rip sausage up into small chunks and fry in a frying pan until seared well.
2. Measure out wet ingredients, then measure out dry ingredients in a seperate container.
3. Mix together the wet ingredients into the dry ingredients. Add sausage and mix again.
4. Measure out batter between 12 cupcake molds. Bake for 20-25 minutes.
5. Let cool for 5 minutes, then remove from cupcake molds. Let cool further or eat warm.
