Lemon Glazed Spice Fritters

Ingredients
  

Spice Fritters

  • ½ Cup Almond Flour
  • 3 Tbsp. Erythritol
  • 1 tsp. Baking Powder
  • 1 Large Egg
  • ½ tsp. Xanthan Gum
  • ½ tsp. Cinnamon
  • ½ tsp. Vanilla
  • Zest of 1/2 Lemon
  • 2 Cups Fat of Your Choice For Frying

Lemon Glaze

  • Juice of 1/4 Lemon
  • 3 Tbsp. Powdered Erythritol

Instructions
 

  • Mix all dry ingredients together.
  • Add your egg and mix well until a sticky dough forms.
  • Bring your oil to 375F on the stove. If you don't have a thermometer, you can drop a small piece of dough it to see when the oil it ready. If it's ready, the dough will begin to fry immediately.
  • Drop your dough balls in 4 at a time.
  • Brown on one side and flip to the other, about 4 minutes in total.
  • Remove from pan, rest on paper towels, and continue to fry the rest.
  • In a small remekin, combine lemon juice and erythritol until a smooth icing is formed.
  • Dip the fritters in the icing and serve!
