Ingredients
  

Mug Cake:

  • 1 ⅓ tablespoon almond flour
  • 2 teaspoon golden flaxseed meal
  • 1 tablespoon erythritol
  • ¼ teaspoon baking powder
  • 1 large egg yolk
  • 1 tablespoon heavy cream
  • ½ teaspoon vanilla extract
  • ½ teaspoon lemon juice

Strawberries & Cream:

  • 1 medium strawberries diced
  • 1 tablespoon cream cheese softened
  • 1 teaspoon powdered erythritol

Instructions
 

  • Measure out and prepare all of the ingredients.
  • Blend almond flour and golden flaxseed meal in a blender.
  • Mix the blended almond flour and golden flaxseed meal with baking powder and erythritol. Stir to combine well.
  • Add in the egg yolk. vanilla extract, lemon juice, and heavy cream. With a mixer, mix for about 30 seconds.
  • Spray the inside of a mug with cooking spray, then add in the mug batter. Top with the diced strawberries. Microwave for 60 seconds.
  • Combine the softened cream cheese and powdered erythritol in a bowl. Stir to combine well. Top the mug cake with this.
  • Dust the mug cake with powdered erythritol.
  • Serve and enjoy!
