Ingredients
  

  • 1 cup cottage cheese
  • 1 scoop protein powder
  • 2 tablespoons peanut butter
  • 2 tablespoons heavy cream
  • 6 drops liquid sucralose

Instructions
 

  • Put cottage cheese and stevia into a cup or food processor
  • Add heavy cream and peanut butter
  • Mix with a spoon to get everything combined
  • Blend or process until the cottage cheese curds are smooth. This should aerate the ice cream and turn it a lighter color
  • Add protein powder and mix with a spoon.
  • Re-blend to get rid of any extra chunks
  • Separate into two servings and place into the freezer for 40 minutes to set, and enjoy!

Notes

If you leave the ice cream in the freezer for too long (2+ hours) it will get a pretty icy consistency. You might want to let it thaw out for 10-15 minutes before you eat it, as it doesn't taste so great. It's best when it's still semi-creamy and very cold.
