In a frying pan over medium heat, add the coconut oil and fry the eggs over easy. Once done, set aside and keep warm.
In the same skillet, add in the olive oil, onion, radishes, oregano, chili powder, cumin, salt, and pepper. Stir this together and let cook for 3 - 5 minutes.
Add the ground pork into the frying pan. Break up and stir. Let cook for 5 - 8 minutes or until there is no more pink.
Plate the over easy eggs and serve with the ground pork. Enjoy!
