Gather and prep all of your ingredients. Pre-heat oven to 400F.
Add olive oil to a pan over medium heat. Then add chopped bacon and cook until crisp. Once crispy, remove from the pan, reserving fat, and set aside.
Season chicken breast with salt and pepper to taste, then cook in the reserved bacon fat over medium heat. We just want to brown each side of the chicken breast, around 1-2 minutes per side depending on thickness.
Place the cauliflower onto a piece of heavy-duty foil. Top with half of the ranch dressing and season with some salt.
Add the browned chicken breast on top, then add the remaining ranch over the top of it.
Lastly, add the bacon, cheddar cheese and spring onion over the top of the chicken.
Fold the foil around the chicken and cauliflower, creating a tight seal.
Place onto a baking sheet and bake in the oven for 20-25 minutes or until chicken is cooked through and cauliflower is tender.
Remove from the oven and let cool for a few minutes before serving. To store, you can place foil packets into an airtight container (or remove from the packets before storage). Enjoy!
