Ingredients
  

  • 12 slices bacon
  • 4 large eggs
  • 4 cups spinach
  • cup cheddar cheese
  • 2 tablespoons heavy cream
  • 1 tablespoon olive oil
  • 1 teaspoon pepper

Instructions
 

  • Preheat oven to 350F.
  • Make bacon weave and cut into quarters.
  • Flip a cupcake tray, cover in foil in the 4 corners, and lay bacon weave on foil carefully.
  • Bake for 50 minutes. Remove, let cool for 10, and switch oven to BROIL.
  • Crack two eggs into a bowl, add heavy cream, and scramble.
  • Heat 1 tbsp olive oil in a pan and cook down spinach. Add black pepper
  • When spinach is cooked, add eggs and turn heat to low. Cook.
  • Fill bacon baskets with egg and spinach mixture. Top with cheese.
  • Add to oven and broil until your cheese has formed a nice crust. Remove and serve.
