Keto Alfredo Zoodles with Bacon

Ingredients
  

  • 8 ounce bacon
  • ½ medium onion
  • 2 teaspoon fresh garlic minced
  • ¼ cup white wine
  • 1 ½ cup heavy cream
  • ½ cup grated parmesan cheese plus more for garnish
  • 16 ounce spiralized zucchini
  • Salt and pepper to taste

Instructions
 

  • Measure out and prepare all ingredients. Dice the onion.
  • Cook the bacon on both sides until the slices are crispy. Place the cooked bacon on a paper towel and set aside.
  • With the bacon fat in the pan, add the diced onion. Cook the onion until translucent.
  • Add the garlic to the pan. Mix together well.
  • Add white wine to the pan and cook until half the wine is absorbed.
  • Add heavy cream to the pan and bring it to a boil. Once boiled, lower the heat to low.
  • Add the parmesan cheese into the pan. Stir until combined well and cook until sauce starts to get thick, about 1-3 minutes.
  • Add the spiralized zucchini to the pan and toss everything together well. Season with salt and pepper.
  • Chop the bacon into bite sized pieces. Put the zoodles in a bowl and top with bacon pieces and parmesan cheese.
