Mix all your dry ingredients well.
Add your egg, stevia, and erythritol to the mixture.
Mix well until a solid dough forms.
Break 3 squares of chocolate into quarters.
Form your dough into a rectangle and cut into 12 pieces.
Push a hole in the center of your square pieces of dough.
Break each quarter piece of chocolate into quarters again and put in the hole in your dough.
Seal the dough and roll into balls.
Heat your coconut oil in a pan on medium-high heat. Wait for it to get to the smoking point.
Add your cookie dough balls to the mixture and fry, turning as needed to brown each side.
Let cool on a paper towel. As it's cooling, grind up 1 tsp. Erythritol in a spice grinder and add as garnish. Enjoy!
