Fried Cookie Dough Balls

Ingredients
  

  • ¾ Cup Blanched Almond Flour
  • 1 Scoop Vanilla Casein Powder
  • 2 Large Eggs
  • 10 Drops Liquid Stevia
  • 2 Tbsp. Coconut Oil
  • ½ Tbsp. Baking Powder
  • 3 Squares Ghiradelli Midnight 86% Cocao
  • 1-2 tsp. Granulated Erythritol As needed, to thicken and sweeten dough
  • 1 tsp. Powdered Erythritol Garnish

Instructions
 

  • Mix all your dry ingredients well.
  • Add your egg, stevia, and erythritol to the mixture.
  • Mix well until a solid dough forms.
  • Break 3 squares of chocolate into quarters.
  • Form your dough into a rectangle and cut into 12 pieces.
  • Push a hole in the center of your square pieces of dough.
  • Break each quarter piece of chocolate into quarters again and put in the hole in your dough.
  • Seal the dough and roll into balls.
  • Heat your coconut oil in a pan on medium-high heat. Wait for it to get to the smoking point.
  • Add your cookie dough balls to the mixture and fry, turning as needed to brown each side.
  • Let cool on a paper towel. As it's cooling, grind up 1 tsp. Erythritol in a spice grinder and add as garnish. Enjoy!
