Ingredients
  

  • 2 ounces feta cubed
  • 15 grams sun-dried tomatoes diced
  • ¼ teaspoon dried basil
  • ¼ teaspoon dried oregano
  • ¼ teaspoon garlic powder
  • 3 tablespoons olive oil
  • 2 teaspoons lemon juice
  • 4 cups spring mix leafy greens
  • 1 ounce slivered almonds
  • Salt and pepper to taste

Instructions
 

  • Combine the cubed feta, sun dried tomatoes, herbs, and 2/3 of the olive oil.
  • Toss gently to coat the feta in the herbs and oil.
  • Allow the feta to marinate while you wash and prep your greens and almonds, about five minutes.
  • In a large bowl, or two small bowls, plate your greens and top with the marinated feta and slivered almonds.
  • Drizzle the remaining olive oil and lemon juice over the greens then toss to coat. Season with salt and pepper to taste!
