Egg and Bacon Cheese Baskets

Ingredients
  

  • 1 ½ cups shredded cheese
  • 6 slices bacon
  • 3 tablespoons rendered bacon fat
  • 6 large eggs
  • 6 tablespoons salsa
  • 1 teaspoon pepper
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon cayenne pepper

Instructions
 

  • Put about 1/4 cup piles of cheese onto your silpats and put them in the oven at 400 degrees for 10-12 minutes.
  • When they come out of the oven, mold them into cups or keep them flat.
  • In a pan, crisp some bacon that's been sliced very thing. I use scissors to slice the bacon as it's easier.
  • Once the bacon is crisp, remove from the pan and let cool on paper towels.
  • In the same pan where the bacon grease is, fry up some eggs.
  • You can use a metal ramekin to remove the excess egg whites and create a circular pattern.
  • Put the fried eggs onto your flat cheese crisps, and top with 1 Tbsp. Salsa and extra bacon.
  • You can scramble 3 eggs in the remaining bacon fat to create scrambled egg cups in the cheese crisps. Top with 1 Tbsp. Salsa and bacon.
