Cheesy Cauliflower Onion Dip

Ingredients
  

  • 1 pound or cauliflower
  • 1 ½ cups chicken broth
  • ½ cup diced sized onion
  • ¼ cup mayonnaise
  • ¾ cup cream cheese
  • ½ teaspoon ground cumin
  • ½ teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon ground black pepper
  • ½ teaspoon salt

Instructions
 

  • Simmer the cauliflower and half an onion in chicken broth until soft and tender. Stir in the cumin, chili powder, garlic powder, pepper and salt.
  • Cut up chunks of cream cheese, and whisk into the cauliflower until the cream cheese melts and is no longer chunky.
  • Use a stick blender, or a regular blender, to blend the mixture until it's smooth.
  • Carefully whisk in the mayonnaise.
  • Chill in the fridge 2-3 hours before serving.
