BBQ Pulled Pork and “Cornbread” Waffles

Ingredients
  

  • 16 oz. Pulled Pork Recipe Here
  • 1 cup Almond Flour
  • 1 tsp. Baking Powder
  • ½ tsp. Salt
  • 3 large Eggs
  • 2 tbsp. Butter
  • ¼ cup Sour Cream
  • 2 tbsp. Golden Flaxseed Meal
  • 1 tbsp. Psyllium Husk
  • ¼ cup Coconut Milk from carton
  • 2 tbsp. Chopped Red Pepper
  • ¼ cup BBQ Sauce Recipe Here

Instructions
 

  • Make the BBQ Sauce and then make the waffle batter by mixing the wet ingredients into the dry.
  • Pour the batter on to the waffle maker and let cook.
  • While cooking, add pork to a pan on medium-low heat with about 3/4 of the BBQ sauce.
  • Once waffles are done, spoon pork onto waffle and top with extra bbq sauce. Serve with extra sour cream if you'd like!
