Alfredo Chicken Skillet with Mushrooms & Spinach

Ingredients
  

  • 2 tablespoon olive oil
  • 24 ounce boneless, skinless chicken thighs
  • salt and pepper to taste
  • 8 ounce cremini mushrooms sliced
  • 4 teaspoon minced garlic
  • 1 cup heavy whipping cream
  • 4 ounce spinach
  • ½ cup Parmesan cheese shredded
  • 2 tablespoon fresh parsley chopped

Instructions
 

  • Gather and prep all ingredients. Season chicken thighs with salt and pepper to taste.
  • Add olive oil to a pan (large enough to fit chicken) over medium heat. Once hot, add chicken into the pan and sauté until browned on both sides, about 3-4 minutes per side. Once browned, remove chicken, leaving any juice in pan, and set aside.
  • Add minced garlic to the pan and fry until fragrant, about 40-60 seconds. Then, add mushrooms, season with salt and pepper to taste, and cook until tender. Reduce heat to medium-low and add in the cream.
  • Add in spinach slowly, stirring to incorporate into the sauce. Once all spinach is added, bring to a simmer and allow the cream to reduce slightly.
  • Add in the parmesan cheese and stir to combine well. Season with additional salt and pepper if required.
  • Add the cooked chicken back into the pan and mix to coat in the sauce.
  • Once chicken is warmed through, serve and garnish with chopped parsley. Enjoy!
