Gather and prep all ingredients. Season chicken thighs with salt and pepper to taste.
Add olive oil to a pan (large enough to fit chicken) over medium heat. Once hot, add chicken into the pan and sauté until browned on both sides, about 3-4 minutes per side. Once browned, remove chicken, leaving any juice in pan, and set aside.
Add minced garlic to the pan and fry until fragrant, about 40-60 seconds. Then, add mushrooms, season with salt and pepper to taste, and cook until tender. Reduce heat to medium-low and add in the cream.
Add in spinach slowly, stirring to incorporate into the sauce. Once all spinach is added, bring to a simmer and allow the cream to reduce slightly.
Add in the parmesan cheese and stir to combine well. Season with additional salt and pepper if required.
Add the cooked chicken back into the pan and mix to coat in the sauce.
Once chicken is warmed through, serve and garnish with chopped parsley. Enjoy!
